Artisan butcher returns to Madera to teach class

Maderans can learn how to butcher a deer this month in a four-hour class taught by artisan butcher and longtime Central Valley resident Bill McCann.

McCann, the master artisan butcher at Berkeley's award winning butchery The Local Butcher Shop, will teach the class Sept. 22 at Chase's Chop Shop at 412 W. Olive in Madera, where he will discuss and demonstrate the complete butchery and skinning of a deer.

Class attendees will go home with a video and sausage made with the meat butchered during the demonstration. Lunch will be provided and attendees get 10 percent off in the shop on the day of class. The class costs $135 and anyone over 18 can register at http://atasteofthewild.brownpapertickets.com or by calling Workingarts Marketing at 662-1119. The class is limited to 30 participants.

McCann's artisanal career spans over 40 years. His rare talent is being increasingly tapped in the Bay Area, where he is often requested to teach at Chez Panisse, Kitchen on Fire, The Local Butcher Shop, and Chase's Chop Shop. Over 1.8 million meat enthusiasts have viewed his butchery videos on YouTube.
